Lighthouse Creations Entree Recipes


Pacific Rim Stuffed Shells

1 pkg (8 oz) Cream cheese at room temperature
¾ C Mayonnaise
¾ C Cooked chicken, chopped, or flaked tuna or salmon
½ C Green onions, thinly chopped
1 pkg Lighthouse Creations Ginger Sesame Dip Mix
1 pkg Giant shells

Cook shells according to package directions. Rinse in cold water, drain and pat dry with paper towel.

Combine cream cheese and mayonnaise. Add dip mix and combine thoroughly. Fold in chicken, tuna or salmon and green onions. Spoon mix into shells. Chill 2 hours or longer. Serve on lettuce lined plate.


Baked Chicken with Rub

Preheat oven to 400. Sprinkle liberally with dip mix. Place in oiled pan.

Bone in chicken (skin side up): Bake for 40 minutes, or until juice runs clear.

Boneless chicken: Bake for 20 minutes, or until juice runs clear.

Bloody Mary Stuffed Shells

1 pkg (8 oz) Cream cheese at room temperature
¾ C Mayonnaise
¾ C Cooked chicken, chopped or salad shrimp, coarsely chopped
½ C Celery or green pepper, finely chopped
1 pkg Lighthouse Creations Bloody Mary Dip Mix

Cook one package of giant shells according to package directions. Rinse in cold water, drain and pat dry with paper towel.

Combine cream cheese and mayonnaise. Add dip mix and combine thoroughly. Fold in chopped chicken or shrimp and celery or green pepper. Spoon mix into shells. Chill 2 hours or longer. Serve on lettuce lined plate.


Grilled Fish or Boneless Chicken with Rub

Preheat oiled grill to medium. Lightly oil chicken or fish.

Place chicken or fish (skin side up) on grill and grill for 2-5 minutes, depending on thickness. Turn chicken or fish and sprinkle liberally with dip mix. Grill another 2-5 minutes, or until chicken juice runs clear or fish begins to easily flake.

Twice Baked Potatoes

Prepare Lighthouse Creations White Cheddar Horseradish or Caliente Cheddar Dip & Spread mix according to directions. Chill until ready to use.

Preheat oven to 350. Bake 4 large potatoes for 1 hour. When potatoes are done, allow them to cool for 10 minutes. Cut potatoes in half lengthwise and scoop flesh into a large bowl, leaving ¼” of the flesh nearest the skin. Save skins. Add 1 C (or more to taste) prepared Lighthouse Creations White Cheddar Horseradish or Caliente Cheddar dip to the potato flesh. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top with sliced green onions. Bake for another 15 minutes.
